There are only 14 Russian companies in the association, which are members this association and “Biostar” on of them. INSCA takes part in the development natural casing market:

Natural casing has distinct advantages

  • Up to the present moment natural casing remains the most ecologically safe ones. According to physical-chemical and biological characteristics natural casings similar to sausage stuffing as it more complete corresponds to technological conditions of its processing.
  • Natural casing is durable enough to be used not only for hand string tying and also for automatic kinking with the use of special equipment.
  •  Natural casings may be not ripped off the ready product. Natural casing frankfurters, wieners and sausages may be eaten without the casing ripping off.
  •  During the process of natural casing product smoking, the smoke penetrates into the product regularly and deeply, and provides the product with taste and flavor throughout the product. There appears golden crust on the ready product surface.

Raw material intestinal quality depends on many factors, such as:

  • Animal species;
  • Animal breed;
  • Animal sex;
  • Animal age;
  • Feed-stuff;
  • Animal fleshing;
  • Animal preslaughter;
  • Hulk cutting speed to gutting and intestines extraction;
  • Guts processing speed.

Use recommendations:

 

Before use it is necessary to shake salted round bundles, to fling salt remains, then to rinse in cool water for 10-15 minutes and soak in warm water for 0,5-4 hours. Soaking time depends on casing condition.

 

• For fresh tinned intestines – 3-5 minutes;
• For intestines with expire date from 3 till 6 months – 30-50 minutes;
• For intestines with expire date over 6 months – 1,5-2 hours.

Strongly dehydrated, dry casings should soak in water for much more time, than casing which has been preserved in brine and hasn’t lost big quantity of humidity. Finally after soaking the casing should revert to its natural state and gain elasticity.
